Peanut Butter Cup Pie

Description Like a giant peanut butter cup in pie form, this pie is rich and fabulous and almost too darn easy to make.  You can replace most of the ingredients with ready-made options to make it even faster to put together.

Chocolate Crust

  • 170 g chocolate cookie crumbs (here i used Oreos)
  • 90 g butter, melted 


Filling

  • 1 cup peanut butter, smooth
  • 1 package cream cheese
  • 100 g sugar
  • 3 cups whipped cream
  • 1/4 cup white sugar
  • 1 oz fudge topping
Methods/steps

Crust

  1. Melt the butter and add to cookie crumbs.  
  2. Press the crumb mixture to the edges of the pie plate.
  3. Chill while preparing filling. 

Filling

  1. Beat the peanut butter, cream cheese, and sugar together on medium speed until well mixed and creamy.  
  2. Fold in the whipped topping until uniform and fluffy.
  3. Pour the mixture into the prepared pie shell and smooth to the edges.  Chill in freezer while preparing the fudge.
  4. Warm the fudge topping until easy to spread.  Pour over top of filled pie shell and chill.
  5. Serve with whipped cream and lashings of peanut butter and fudge, if desired.
Additional Tips
If you make this in a deep dish pie plate, it's very rich, so I prefer to leave it unadorned.  But when making it in a less deep pie plate, it works well to cover the entire pie with whipped cream and drizzle warmed peanut butter and fudge over the top.
